Often, emergency supply lists can be overwhelming. All that stuff to assemble. Good news for your food and water supplies. You do not have to create a five course meal on your BBQ after a disaster.

Think simple – Easy to buy – Easy to store – Easy to carry – Easy to eat.

At least in part, depending on the type of disaster and length of time you are on your own, you can reduce the food preparation hassle and problems of transporting some food supplies; at least for the first day or two.

Water supply: Two cases of 35 half liter plastic bottles of water. One case is about 5 gal., enough for five people for one day. These bottles are small enough to carry easily by individuals in 1 to 4 bottle loads. No need for drinking cups. The water is free from contamination.

Food supplies: Nutrition bars. A 12 pack is good for three people for one day. Beef Jerky. A little salty but nutritious and full of protein. Beef sticks. Pretty much the same as Jerky, just as easy to carry.

Dried fruit. Very tasty the kids will love it. A box of crackers, unsalted. A box of powdered orange juice.

These food items require no cooking and they are easy to carry and easy to eat. Additionally, you will reduce items such as drinking cups, plates, eating utensils, heating or cooking tools from your supplies. Keep in mind these are suggestions, you will want to tailor your needs to your family.

Of course it would be good to have a hot cup of coffee or a hot can of stew cooking on your BBQ, however, for the short time you will be more interested in surviving, not comfort. I do not recommend this diet for long, but for a day or two, it will keep you alive and well, infants are not included in this diet.

Melamine, Pet Food and Our Food Safety

In September 2008, the world was shocked at the sight of little babies in China attached to dialysis machines as they fight for their lives. Yet, the news of contaminated milk formula did not gain much attention until it was realized that the melamine problem is not only restricted to China only but has actually spread globally. However, no ill effects of melamine has been reported outside China and its territories.

Melamine is an organic compound with the official IUPAC name of 1,3,5-triazine-2,4,6-triamine and the chemical formula of C3H6N6. It is a solid white-colored base, and is odorless. It is slightly soluble in water, stable, and not easily biodegradable.

Melamine is an industrial ingredient used to manufacture different kinds of products. It is used in combination with formaldehyde in the production of plastics and cleaning products. It is also combined with other compounds in the manufacture of fire retardants, pesticides, fertilizers, extra-strong concrete. Many things in our home have been manufactured with the use of melamine, from Formica counter tops, to certain fabrics, to plastic kitchenware (melaware).

Melamine has been thought to be of low risk to humans. According to this Material Safety Data Sheet (MSDS), melamine is “Harmful if swallowed, inhaled or absorbed through the skin. Chronic exposure may cause cancer or reproductive damage. Eye, skin and respiratory irritant.” The toxicity of melamine, however, is low. To be “poisoned” by melamine, as determined by the so-called LD50, which is the lethal dose that will kill 50% of animals tested, is 3 g per kg of body weight (source: WHO).

According to studies cited in the Hazardous Substances Data Bank (HSDB), “melamine itself does not seem to be important industrial hazard except if decomposed by heat.” Allergic and irritative dermatitis have been observed to result from occupational exposure to melamine but no permanent injury due to toxicity has been reported.

Like most industrial chemicals, toxicological tests on melamine have been performed using animals to determine its potential toxicity to humans which include the formation of calcareous deposits in the kidneys of female rats after 13 weeks of feeding melamine-containing food (WHO) and tumors in the urinary bladders of male rats fed diets with melamine for 103 weeks (IARC). According to this later study, melamine and cyanuric acid together caused renal toxicity in cats, pigs, and fish. The study concluded that “although melamine and cyanuric acid appeared to have low toxicity when administered separately, they induced extensive renal crystal formation when administered together.

However, there are significant gaps in our knowledge of melamine and its effect on our body. The safety/risk assessment conducted by the US FDA did not give any clear answers. In food products other than infant formula, the FDA concludes levels of melamine and melamine-related compounds below 2.5 parts per million (ppm) do not raise health concerns.”

In the current melamine contamination scandal, however, it is not acute toxicity that caused the health problems. What is making the babies ill is chronic or subchronic toxicity. In addition, the toxicity of melamine increases when combined with another compound called cyanuric acid. Cyanuric acid theoretically non-toxic is present in food additives for animal feeds and in water disinfectants. Human exposure to cyanotic acid may be through swimming pool waters, drinking water, and fish. The combination of these two compounds can lead to acute toxicity, as it produces melamine cyanurate, a toxic substance in the form of insoluble crystals that then accumulated in vital organs, especially the kidneys, forming renal crystals or kidney stones that block kidney tubules.

It is speculated that manufacturers mixed melamine in milk formulas to increase the protein content of their products. Food products are tested for protein content by measuring nitrogen content. Looking at the chemical composition of melamine, we can see that it has high nitrogen content.

This not the first time that melamine was used deliberately as protein content enhancer although this is the most deadly so far. In 2007, many cats and dogs died of kidney failure as a result of the formation of renal crystals or kidney stones. The cause of the renal toxicity was traced to melamine which was detected in pet food. Melamine-cyanuric acid cocrystals were found in the animals’ kidneys and the case was well-publicized. It is therefore highly unlikely that the perpetrators who tainted the baby formulas are unaware of the hazards of melamine consumption.

But this year’s melamine scandal was more shocking than last year’s because it affected and killed little babies. The following is a summary of events.

September 2008 – Fourteen babies in the Chinese province of Gansu were reported to be suffering from kidney stones, a very rare occurrence in young children. The suspected cause was the milk formula they were drinking. More and more cases of ill babies were reported all over China. The milk powder in question was manufactured by the Sanlu Group.

The US Food and Drug Administration (US FDA) issued a health information advisory on infant formulas. The advisory “is to assure the American public that there is no known threat of contamination in infant formula manufactured by companies that have met the requirements to sell infant formula in the United States… The following manufacturers have met the necessary FDA requirements for marketing milk-based infant formulas in the United States: Abbott Nutritionals, Mead Johnson Nutritionals, Nestle USA, PBM Nutritionals, and Solus Products LLC.”

The director of the Chinese agency General Administration of Quality Supervision, Inspection and Quarantine resigned as investigations showed that the melamine contamination is quite widespread. Tests showed that milk products of up to 22 dairy producers were contaminated with melamine.

The US FDA updated the advisory to issue a list of contaminated products manufactured in Taiwan, including Mr. Brown instant coffee and milk tea products.

The New Zealand Food safety Authority found melamine in China’s most popular sweet White Rabbit Creamy Candies.

The UK chocolate maker Cadbury recalled its Chinese-made products after chocolates from their Beijing factory tested positive for melamine, according to this International Herald Tribune report.

October 2008 – The problem spread to Europe. Chinese candies contaminated with melamine were found in an Asian supermarket in Germany. There were also reports of contaminated food products in Belgium and the Netherlands. The US FDA detected melamine in Blue Cat Flavor Drinks.

The Canadian Food Inspection Agency (CFIA) issued a warning against the consumption of Sherwood Brands Pirate’s Gold Milk Chocolate Coins which tested positive for melamine. It was not clear how the contamination occurred.

The numbers of ill babies rose up to tens of thousands. Eighty percent of those affected were below the age of 2. Four cases proved to be fatal. China also recalled not only powdered milk but also liquid milk manufactured during the last couple of months.

Hong Kong found excessive amounts of melamine in eggs coming from mainland China. Officials suspected that the contamination came through melamine in the chicken feeds. They have ordered testing of all animal feeds and poultry products from the mainland. “Hong Kong has imposed a limit on melamine use in foods, restricting it to no more than 2.5 milligrams per kilogramme. Melamine found in food meant for children under three and lactating mothers should be no higher than one mg per kg”, according to the BBC.

November 2008 – The US FDA issued a nationwide alert warning for Chinese import food products and found traces of melamine in one baby formula made by an American manufacturer. The regulatory body claimed the contamination was accidental but did not go into details.

December 2008 – Food Standards Australia New Zealand issued a list of products contaminated with melamine.

The US FDA tried to assure the American public that American-produced formulas are safe from contamination. “To date, FDA tests have found extremely low levels of melamine in one infant formula sample and extremely low levels of cyanuric acid in another. The levels were so low (well below 1 ppm) that they do not pose a health risk to infants.” The FDA made public the test results on domestic infant formula. Good Start Supreme Infant Formula with Iron from Nestle contained very low amounts of melamine. In addition, cyanotic acid was found in one type of Enfamil from the manufacturer Mead Johnson.

On the part of the Chinese health authorities, they are trying to repair the damage through recalls and arrests of those responsible. Developing countries, however, which do not have the means to test import products, are at risk of becoming dumping grounds of contaminated products.

The best strategy is to simply avoid melamine at all costs. Consumers are advised to be vigilant about what they buy and consume, most especially products consumed by children in large quantities. These include milk and milk products, chocolates, sweets, and biscuits.

Eating Habits of Shift Workers – Are You Addicted to Take Away Food and Energy Drinks?

If you’re a shift worker then your eating habits are probably not going to be the best, nor are they something that your mum would be proud of! In fact, as most shift workers suffer from constant fatigue and tiredness, they actually use this as an excuse not to eat healthy.

The good news is that if you took the time to make yourself something healthy to eat, you wouldn’t be feeling so tired and fatigued all of the time. Not to mention the amount of money that you will save on take away food, junk food and copious amounts of caffeinated energy drinks.

So that brings me to this question. “Are you addicted to take away food and energy drinks?”

Now I want you to answer this question honestly because if you’re relying on these to get you through your shift then it’s time to change your diet – right now. Not tomorrow, not next week – but right now.

You see the human body is an amazing machine as it puts up with quite a lot of neglect before it shows any signs of ill health. And this is why so many people continue to eat and drink unhealthy because they have been able to get away with it – so far.

But rest assured, there will be a time when your body says “No More!”

So if your eating habits are bad and you’re addicted to take away food and energy drinks, then what can you do to change this? Well just like any addiction it’s going to take time, hard work and perseverance on your part.

A tip to help you get started is to get organised and write up a menu plan for the entire week. Go through your recipe books or search online for some dishes that you would like to try, and then write your grocery list accordingly. You can begin by planning for just 7 days (or around your shift work schedule) and chose a variety of menus incorporating fish, meat, chicken and vegetables – that way you’re getting a good selection of vitamins and minerals.

Pin your menu plan on the fridge so that everybody in the household knows what they’re going to be eating for the entire week – that way there will be no excuse for buying take away and/or junk food.

Not only will you begin to enjoy a healthy and varied diet, but you will be saving a fortune as you no longer buy overpriced, unhealthy food that only zaps your energy and adds to your constant fatigue and tiredness.

Lose Weight by Eating Breakfast and Drinking Milk

Did you know that dieting and weight loss are two of the most common resolutions or goals by many people but usually results to failure? Don’t give up yet. Stay committed and read through.

If you really want to lose weight, forget the fad diets and eat breakfast and drink milk. Starting each day with milk and cereal may be the success for achieving a healthy weight.

Many people don’t realize to eat breakfast but to skip entire morning tastes, either because you’re in rush or lazy, or just want to reduce weight. Considerable number of people finish with a soft drink or a cup of coffee as their morning meal. Chances are this is going to have an opposite effect on you because skipping meals almost always leads to overeating at lunchtime. This is especially true with breakfast, because you’ve just been asleep for 7 or 8 hours and your body needs to recover from this brief period of starvation.

Studies show that people who regularly eat breakfast, particularly cereal with low fat or fat-free milk, tend to be leaner compared to those who skip the morning meal or eat other options. Combine that with studies drinking 24 ounces of milk a day with healthy weight loss, and you’ve got a strategy that may lead to lost pounds. Multiple studies have shown that people who drink milk and get adequate amounts of calcium in their diets tend to weigh less than their peers who don’t drink milk. A diet deficient in calcium has a higher risk for being overweight.

Weight Control by Eating Eggs

Eating eggs for breakfast can reduce hunger and caloric intake by more than 400 calories, both at lunchtime and over the next 24 hours. As a result, eggs are useful in helping overweight people reduce their energy intakes, a prerequisite of losing weight. This is great news if you’re trying to lose weight as it means you may find it easier to cut calories without feeling hungry. In fact, you could expect to lose up to 2lb. a month, simply by eating eggs for breakfast!

Eggs are packed with various nutrients but contain just 85 calories each. There’s also no limit to the number of eggs you can eat in a week contrary to popular belief.

Other studies found that protein-based breakfasts improved weight loss better than carbohydrate-focused breakfasts. The better effects are increased when it’s combined with exercise.

Should I avoid eating certain foods for the sake of weight loss?

Forget about avoiding eating a certain food that you like to eat – that’s a dieter’s mentality and it doesn’t help you lose weight. It just makes you obsessed about food and eating. Instead, if you are really hungry, then eat, and stop as soon as you’re satisfied. Just don’t eat until you’re totally full! So, if you’re hungry during breakfast, then eat. If you’re not hungry during lunch or dinner, then have a smaller meal.

Keep in mind that you should not eat too many sweet foods. No matter what time you eat sweets, if it’s more energy than your body can use, it will be stored, meaning excess kilos.

Fad diets won’t work and only provide short-term results. Instead, always enjoy a wide variety of healthy foods and be physically active. Fad dieting is a hindrance that you don’t need in your life.

The Benefits of Raw Food and Juicing

Our bodies contain millions of cells, all of which are constantly regenerating. They say that we actually have a completely new body every seven years. The body is actually divinely created to heal itself and maintain perfect health. Given that new cells are constantly being generated and cellular growth and repair is continuous, the question becomes “What are we putting into our bodies to support that growth?” The problem is that we are not allowing our bodies to heal and we are killing ourselves mostly by what we put into our bodies.

The sad fact is that the Standard American Diet (SAD) consists of mostly dead foods that actually have little value and actually promote obesity and disease. The rate of obesity in America is reaching epidemic proportions and it is estimated that by 2010, over 40 million people in America will have Type II Diabetes. In addition, the number of people who die from heart disease and cancer is a staggering proportion of all deaths.

The Standard American Diet (SAD) is full of processed food and large quantities of high-fat meats, dairy products, sugar, salt and caffeine. Each one of these food types brings about different problems. Almost all processed foods have been heated in order to be packaged and preserved. After food is heated beyond about 107 °F, the live enzymes are killed and the nutritional content suffers. Almost all processed foods need to have added vitamins and minerals to “enrich” them because on their own, there is really very little nutritional value left. The added preservatives are chemical additives and the added vitamins and minerals are typically not in natural soluble form like you would find in fresh, raw food.

The high-fat, high meat diet brings a whole host of problems including high cholesterol, arterial and coronary diseases. Diets that are high in animal products will cause the body to become more acidic due to the way that they are metabolized. It has been shown that various cancers will grow more readily in an acidic environment. The natural pH of the body should actually be around 7.4, but the pH of the body can decrease and become more acidic with a high meat/animal product diet. Eating a lot of meat and animal products also can cause other problems such as constipation, heartburn and reflux.

Dairy products also cause similar problems as animal products. In addition, it turns out that the human body actually absorbs very little of the calcium in cow’s milk. In effect, the body will leach the calcium it needs from its own bones, thereby causing or exacerbating osteoporosis. This happens because the body tries to neutralize the acids caused by digesting the animal products and utilizes its own bone calcium to do so.

Bleached white flour turns to paste when added with water. Imagine what it does inside your body? It is much better to eat the entire whole grain flours, and even then, in moderation. Our diet is loaded with bleached white flour.

The average American eats something like 300 pounds of sugar each year. Sugar turns to acid when digested and also disrupts insulin production in the body. The main culprit is the number of soft drinks consumed every year by the average American, which also contain high levels of sodium, which leads to high blood pressure. In fact, sugar and sodium is in practically everything we eat. High blood pressure makes the heart work harder and can lead to heart attacks and strokes.

The good news is that the ill effects of the Standard American Diet (SAD) are almost entirely reversible! The way to do it is to adopt a raw foods lifestyle.

Eating raw foods means eating fresh fruits, vegetables, nuts and legumes. Organically-grown fruits and vegetables contain everything our bodies need to survive and thrive. Raw foods are living foods – the live enzymes are still intact and the vitamins and minerals are in their natural state. All the animals of this planet exist just fine on raw foods (even the carnivores eat raw meat). Humans are the only species that cooks their food. The more research I have done, the more I am convinced that a raw foods diet is the only choice for me.

Converting to a raw foods diet is easy and can bring about the following health benefits:

Reduction or elimination of acid reflux and heartburn
Increased regularity and decreased constipation and related problems such as hemorrhoids

Another aspect of a raw foods diet involves juicing. It helps to drink raw juice from fruits and vegetables. When you think about the chewing process, our teeth mash up the food in order to release the juices. The juice contains all the vitamins, minerals and enzymes. The remaining pulp and fiber is basically passed through the body. By extracting the juice from the raw foods, several benefits occur. First, when you drink the concentrated raw juice, it can be absorbed immediately by the body. If you were to eat the whole fruit or vegetable instead, some of the energy is required for digestion. Thus, it is more efficient for the body to just drink the juice.

Second, it takes a lot of food to produce a good quantity of juice. For example, it takes about 5-8 large carrots to create 8 ounces of raw carrot juice. I drink about 24 ounces of raw carrot juice every day. It would be hard to eat 24 carrots every day! I have found that drinking 24 ounces of fresh vegetable juice every day has enabled me to feel very energetic and healthy. I have been able to eliminate caffeine and coffee from my diet and I have not had a cold or flu since I began juicing a few years ago.

I hope I have provided some good food for thought (no pun intended!) regarding the benefits of raw food and juicing. You probably have a lot of questions about creating a raw foods diet. I know I did! There are a number of good books, articles and websites related to raw foods (I have a number of links available on my website). I encourage you to continue your research. Even if you simply cut back on some of your current habits and consistently introduce more raw fruits and vegetables in your diet, you will probably notice a big benefit in the way you feel. The Best High Fiber Foods and Health Drinks Are Not In Stores

While consuming fruits, vegetables and water every day is important, superior fitness can be achieved with high fiber foods and health drinks not found in stores. Even if you can digest the recommended 25-35 grams of fiber in food and 8-10 glasses of water every day, you may not be getting the best nutrition available.
